Barley Swine…watch out!

The water is really through reverse osmosis in these cute little jugs!

Omgosh!  So if you haven’t been to Barley Swine in Austin, you’re totally missing out!  RMK and I hands down have called that our favorite restaurant because everything, EVERYTHING on the menu is so unique and delicious…even the amazing beer.  We have tried very hard to copy their grilled carrot salad, their olives, and even their amazing brussel sprouts ( I know, brussel sprouts!).

This Squash Curry was so good, I wanted to take more home. Just simply amazing.

But now, we have a tie.  Everyone in Denver talks about Root Down.  For my birthday, my lovely hubby gave me a spa weekend, but on top of that, he stayed awake to take me out to dinner!  I picked Root Down and told him to make reservations, even on a Tuesday night.  So he called, AT 4 pm the day of!  All the reservations were gone!  Can you believe that?!  So we walked in hoping to be lucky, and guess what, the last freaking table was available!  So happy!

The beet salad came with a pistachio crusted cream bread that I now have to try and replicate!

Everything is sustainable, even the building itself.  They go out of their way to make local, organic produce with low energy and low impact waste.  And the food is simply amazing.  RMK kept moaning over their lamb sliders.  Now the concept is very similar to Barley Swine, but I have to say their menu is way more adventurous.  Probably because of their customers (Denverites vs. Texans).  Anyways, if you’re in Denver and you like good food, wine, and beer, this is it.

THE most amazing scallops you have ever tasted...mixed with plantains. I know so unique yet so so good!
